Pazham Nirachathu or Stuffed Banana Fry - Cooking Revived

Ingredients
 6 Banana (Nendrapazham)
For the Stuffing
 1 cup Rice Flakes or Poha
 ½ cup Sugar
 ½ cup Grated Coconut
 A little water
For the Batter
 1 cup Maida
 2 tbsp Rice Flour
 A Pinch of Salt
 3 tbsp Sugar
 ½ tsp Cummin Seeds
 Water to make the batter

Pazham Nirachathu or the Stuffed Banana Fry is a delicious evening snack from the Malabari cuisine. To make this stuffed banana, we use nendrapazham - the traditional yellow banana you get in Kerala.

To make this delicious evening snack, we need to make the stuffing as well as the batter.

First, we will make the stuffing. For this, we mix together all the ingredients for the stuffing together. Add a little water to this, around 2 tbsp of water will do, and mix well. This is to make the stuffing soft. Once it is ready, keep it aside.

Next step is to make the batter. For this, mix together all the ingredients for the batter. Add enough water to make it to a thick batter. Make sure that there are no lumps in the batter. You can even use a beater to ease the process. Finally, add cumin seed to it and mix well. This gives a lovely flavour to the banana fry.

The next step is to fry the bananas. For this, heat oil in a heavy bottomed pan. You will need a lot of oil for this. Dip the bananas as a whole into the batter and fry them in the oil. Make sure that the stuffing comes on top when you put it in the oil. Pour some batter on the top so that the stuffing does not come out. Fry the bananas on medium flame. After some time, flip it to the other side and cook on the other side as well. Flip sides for a couple of more times. You need to do this till the bananas are perfectly cooked.
