 10 g China Grass
 1 ¼ cups Water
 ½ l Milk
For Caramel Syrup
 ½ cup Sugar
 2 tbsp Butter
  cup Fresh Cream

Begin by creating a velvety caramel syrup that will elevate the flavor profile of your pudding.
Melt 1/2 cup sugar and caramelize it. How to caramelize it? Please see the steps.

In a pan, put half a cup of sugar and keep it in the slow fire, without stirring. Let it melt and caramelize. No need to add in extra water.

Once the sugar is completely melted and caramelized, add in the butter and stir well. Once the butter has melted, add in the fresh cream and mix it well and pour this mixture into a bowl and keep it aside.

Now, mix the milkmaid and milk and put it on the stove. In another pan, melt the china grass soaked in water. Once the milk mixture bubbles add in the china grass mixture to it and mix it well.

Now, add the caramel sauce, stir everything together well. Now, pour this into a pudding mould.

Once it's cooled down you can keep it in the fridge. When you are serving you can top it with caramelized nuts.
