 ½ kg Chicken
 ¼ tsp Turmeric Powder
 1 ½ tsp Chilli Powder
 10 Curry Leaves
 2 Tomatoes pureed
 1 tsp Ginger Garlic paste
 3 Big Onions
 2 Green Chillies
 Coconut oil to saute
 Salt to taste

Note: This is easy to make chicken and delicious as well. Similar to a chicken preparation of a nearby local hotel of Calicut, I remember me and my brother used to call it 'valikka chicken'. Well, I am not claiming it is exactly like that but it definitely is yummy and I am sure you will not be able to resist it. We will call it the Easy Tomato and Onion Chicken because these are the main ingredients that go into the preparation.

To start with, first marinate the chicken with turmeric, chilli powder, salt, curry leaves, tomato puree, and ginger garlic paste. For best results, I would say leave it for some time. Then, after some time, cook the chicken well.

Now, saute 2-3 big onions chopped in coconut oil. (This is what actually adds body and taste to this easy tomato and onion chicken. Add more onions and the better it will taste). Slit 2 green chillies and add 1 sprig of curry leaves to the onions.

Afterward, when the onions become translucent, you can add in the cooked chicken to this. Now, cook it in slow fire for some time till you get it to the desired consistency. With all the marination of the chicken blending in with the sauteed masala, a mouthwatering chicken preparation will be ready.

Just serve me some piping hot steamed rice and curds with this chicken dish made by my mom and my lunch or dinner is sorted.
