Mushroom is undoubtedly an healthy alternative to chicken for the vegetarians. Moreover, the ways in which mushroom can be cooked is vast. This mushroom dry fry is in general very easy to make and at the same time yummy.
The first step is to mix together coriander powder, red chilli powder, turmeric powder, garam masala powder, pepper powder and also salt. The next step is to blend it with the mushrooms. Now, add more salt if required. Then, mix the coconut milk into this and blend well. In a nutshell, you need to ensure that the masala powders are well mixed and there are no lumps in this mix. Now, place this on the stove and let it cook. Cook them till the mushrooms are cooked throughout and the coconut milk is also reduced completely.
Once this is done, the next step is the tadka. For this you have to first heat oil and then add the mustard seeds next. After the mustards splutter, you have to add in the thinly sliced onions, ginger and also the curry leaves. Then, saute this till done or the onions turn light brown. At this stage, you have to add in the cooked mushroom to this and stir fry. You can also add more oil if required. Continue to fry the mushrooms till it becomes fully dry. In other words, this will take some time. Now, your mushroom dry fry is ready. Serve hot with meal or you can even have with with any roti. It tastes really yummy.
