Nankhatai is a delicious cookie that is very easy to make. Though there are several versions of nankhatai recipes, the one mentioned here is made with cashew nuts and the best part is that it is made with atta and maida.
First you need to sieve together all purpose flour, wheat flour and baking powder in a deep bowl. Now, grind together sugar and cardamom to a fine powder and also mix it with the flour mixture. Next, make sure to coarsely grind the cashew nuts. But, do not grind it to a fine powder.
Also, add in the coarsely ground cashew nut to this. However, cashew nuts are optional. You can make the nankhatai without the nuts as well. If you are not using it reduce the quantity of ghee.
Next, add ghee to make a smooth dough. The next step is to grease a cookie sheet or use a non-stick tray with butter or ghee. Now, make small balls out of the dough and press it lightly with your hands. You can make some cross cuts over the shaped balls and sprinkle some coarsely ground cashew nuts on this. On the other hand, if you are not using cashewnuts, you can even dab some pistachios or chopped almonds on the cookies.
As soon as that is done, bake it in a preheated oven for 17 - 20 minutes (throughout keep checking - till the sides of the cookies turn golden) at 180 degree. C. Finally, when done, remove from oven and cool. Now these yummy and crunchy cookies are ready to eat. You can also store it in an air tight container for later use.
