Ingredients
 2 Potato (big)
 1 Carrot
 ½ cup Green Peas
 6 Cauliflower florets
 2 Onions
 1 Capsicum
 3 Tomatoes
 1 tsp Kashmiri chilli powder
 1 tbsp Pav bhaji masala (can add more according to taste)
 ½ tsp Kasuri Methi
 2 tbsp Butter
 2 tbsp Oil
 Coriander leaves chopped
 ½ tsp Juice of a Lime
 ½ tsp Ginger garlic paste
 ¼ tsp Jeera

Pav Bhaji is a must try North Indian Snack. To make it, first, put the chopped vegetables in a pressure cooker. Now, add salt and little water. Then pressure cook for 4-5 whistles. Now, remove this cooked vegetables, mash it with a potato masher and keep it aside.

Meanwhile, heat oil with 1 tbsp butter in a pan. Add cumin seeds. When it begins to sputter, you can add in ginger garlic paste. Then, sauté it well till the raw smell leaves. After that, add the chopped onions and a little salt. When it becomes soft, add the chopped capsicum and sauté well. Now, add chilli powder, pav bhaji masala, and Kasuri Methi. Fry this well on low fire. Then, add the chopped tomatoes and fry well till the oil separates.

For the next step, add the mashed vegetables along with 1 cup of hot water. Mix it well. At this point, you can add more salt if required. Now, cover the vessel and cook till it reaches the desired consistency. Finally, add in the chopped coriander for garnish and 1 tbsp butter. Finally, you can squeeze in half a lime for taste. Now, you can serve this topped with chopped onions. It is the best accompaniment for butter toasted pav.

To add more colour, you can heat 1 tsp of Kashmiri chilli powder in ghee and mix it into the bhaji.
