Ingredients
 3 Medium size potato (cut into small pieces)
 100 g Shallots
 2 Green chilli (slit)
 ½ Inch piece - Ginger (chopped)
 A few Curry leaves
 3 tsp Coconut oil
 ¼ tsp Turmeric powder
 ¼ tsp Coriander powder
 ¼ tsp Chilli powder
 ¼ tsp Garam Masala
 ½ cup Thick Coconut milk (1st milk)
 250 ml Thin coconut milk

Stew is something almost every household will be making. But, here is a really simple and different stew that you could make with potatoes - Special Potato Stew. It is really delicious and easy to make. Now, let's see the method to make this delicious stew.

To start with, put the cut potatoes in a pressure cooker along with the small onions, ginger, green chilies, curry leaves, all the spices mentioned in the list and salt. To this, add 1 tsp coconut oil. Mix everything thoroughly and pressure cook, for 1 or 2 whistles.

After some time, open the pressure cooker lid and add in the thin coconut milk and let it boil. Finally, add the thick coconut milk. Then take it off the gas.

Now, it is time for the tempering. For this, you need to heat some coconut oil in a pan. When the oil is hot, add in 3-4 small onions chopped in coconut oil. Then saute this well. After it turns golden brown, add this to the stew. This helps to enhance the taste.

Your delicious Special Potato Stew is ready. It tastes best with appam.
