The sweet potato omelette is a nutritious yet tasty twist on the classic omelette. This fusion cuisine dish combines the sweetness of sauteed sweet potatoes with the fluffy texture of beaten eggs. It can be enjoyed for breakfast, brunch, or a quick and hearty dinner and it offers a delightful balance of flavors in every bite.

 

Ingredients
 1 Sweet Potato
 2 Eggs
 ¼ tsp Paprika
 ½ Capsicum
 1 tsp Red chilli flakes
 1 Onion (medium sized)
 Coriander leaves to garnish
 Salt to taste
 Pepper to taste
 Green chillies- optional
 Cheese slices- optional
 Olive oil
Method
1

First, pour a little olive oil into a pan and layer the round thin slices of Sweet potato.

Let it cook for a bit, sprinkle it with paprika and red chili flakes, layer the Capsicum over it.

Close the lid and let it cook through properly. You could also layer it with cheese slices or sheets if you want. It's optional.

Meanwhile, mix the eggs with salt, pepper, and onions. You can also add green chilies to the egg mixture if you want. Beat it thoroughly.

Now open the pan and pour the mixture over the layered sweet potato. And then close it till it cooks through properly. After it's cooked thoroughly, you can flip it on a plate and garnish it with coriander leaves. Your Sweet Potato Omelette is ready to be served.
